Ingredients:
700 g ( approx. 1.5 pounds) potatoes
150 g mozzarella cheese cut in cubes 150 g ham thick sliced. 3 heaping tablespoons of Parmesan cheese 2 eggs Salt and pepper as desire
Procedure: Cook the potatoes in boiling water until soften. Once they are ready peel and mash them in a bowl. Cut the ham and mozzarella in small cubes and keep them aside. In the bowl where you have the mashed potatoes add the eggs, salt and parmesan cheese and stir it all together. Add the ham and mozzarella cheese cubes. Pour your mixture in a baking dish. Let it cook in the oven 180˚ Celsius or 350 ˚ Fahrenheit for 30 minutes
Optional: You can sprinkle bread crumbs on top before baking it.
