Tabouli Salad

Ingredients:

1 cup Bulgur

1/3 piece of onion (finely chopped)

1 lime (juiced)

3 tablespoons olive oil

2 tablespoons finely chopped fresh parsley

2 tablespoons finely chopped fresh coriander (cilantro)

2 tablespoons finely chopped fresh mint

1 cucumber (grated or finely chopped)

1 large carrot (peeled and grated)

2 cloves garlic (freshly pressed)

Salt

Pepper

Optional: finely chopped tomatoes

Procedure:

Cook bulgur in 2 cups of boiling water for about 10 minutes. Let the bulgur cool after cooking. Once cool, add the remaining ingredients to the bulgur in a large bowl. Stir to combine. Add salt and pepper to taste.

This salad is best prepared in advance. Make ahead and let it “pickle” for at least 6 hours for the best flavor.
