Date and Walnut Cake

Ingredients :

2/3 cup chopped, dried dates

zest of 1 lemon

1/2 cup Earl Grey tea

3 tbsp butter

1/3 cup firmly packed light brown sugar

1 egg

1 cup flour

1/2 tsp baking soda

1 tsp baking powder

1/4 cup chopped walnuts

Procedure :

Preheat the oven to 177˚C (350˚F). Grease an 8.5 inch loaf pan and line with parchment paper.

Put the dates, baking soda, and lemon zest into a bowl with the hot tea and let soak until soft, about 10 minutes.

Cream the butter and sugar together until the mixture is light and fluffy. Then, beat in the egg.

Stir the date and tea mixture into the butter/sugar/egg mixture.

Fold in the flour and the baking soda.

Fill the pan with the batter and bake for 35-40 minutes. Cake should rise and turn a golden brown color when finished.

Let the cake to cool down and be ready to enjoy a delicious Date and Walnut Cake.

Note:

I recomend to prepare a doble amount of the ingredients.
