Polvorones de Nuez / Tea Cookies

Ingredients:

1 cup of butter ( room temperature)

1 teaspoon of vanilla extract

½ cup of confectionary sugar

2 cups of all purpose flour

1 cup of chopped pecan nuts

¼ teaspoon of salt

Procedure:

Combine all the ingredients in a large bowl and mix well. Refrigerate the dough for approx. 2 hours.

Preheat the oven to 350 ˚ F or 175 ˚c. Roll the dough into 1 inch balls and bake for 15 minutes. Once baked, toss them into a large bowl with confectionary sugar while the cookies are still warm. You can roll them twice or sprinkle with confectionary sugar to coat. Enjoy with your favorite tea or a cup of coffee.
