Spicy Tomatoe Soup, Andreja's Favorite

Ingredients:

1 can of diced Tomatoes aprox. 28 oz. or 780 grams

2 carrots

1 red pepper

2 to 3 pickled bell peppers or pickled banana hot peppers

1 cube of chicken or vegetable stock

5 fresh basil leaves

½ teaspoon of Chili powder

½ teaspoon of Oregano

2 garlic cloves

Salt and pepper to desire

1 oz. Mazola or sunflower oil

Procedure

Grate carrots, red pepper. Chop pickled peppers. Chop garlic into small pieces. In a deep pot, place oil and saute carrots, peppers and garlic, chicken stock or vegetable stock, add chili powder, oregano, chili flakes and basil leaves. Add the canned tomatoes, let it cook for 20 minutes and add 1 teaspoon of sugar if necessary.

Serve it with croutons and grated cheese or with cheese sticks.
