Arroz Chaufa/ Peruvian Fried Rice

Peruvian Friends
Ingredients
1 cup of rice
1 tablespoon of butter
4 eggs
3 tablespoons of soy sauce
1 bunch of spring onions
½ cup of frozen peas
2 finely chopped celery stalks
Optional:
6 bacon stripes fried and cut into small pieces
1 cup of cooked chicken breast
6 chopped hot dogs
Procedure:
Cook 1 cup of rice with two cups of water, cover with lid, once the rice is cooked add 1 tablespoon of butter, let it cool down and reserve. Whisk the eggs together with a pinch of salt and pepper. Heat 1 tablespoon of oil in a frying pan. Pour the eggs into the hot oil and once its is cooked throughly turn the ommelette over and finish cooking. Remove eggs to a chopping board and cut them into very small squares.
Add oil to a wok and add the sping onions, celery, peas, let it cook for 2 minutes, add the rice, stir it well, add soya sauce, eggs and desired options such as chicken, hot dogs or bacon. Mix well and serve it hot.
