Sam Pennell’s Style

Ingredients:

1 cup of butter - melted 1.5 cups of white sugar 1.5 cups of soft brown sugar 1 tablespoon of vanilla extract 4 eggs 1.5 cups of plain flour (all purpose) 1 cup non sweetened cocoa 1 teaspoon salt 1 cup chocolate chips ( optional )

Procedure: Preheat oven to 175 C

Melt cup of butter and place in a bowl, with both sugars, mix well, add vanilla, and mix again. Add each egg separately and mix well between each addition. Make sure thoroughly blended. Add the flour, cocoa and salt, mix well till blended. Add the chocolate chips if using, mix again. Pour mix into a large brownie pan and cook for approx. 25 minutes - 30 minutes, a toothpick should come out clean, be careful not to over bake though as they will lose their moistness. Cool on a wire rack, cut into squares and serve.
