Salad Marifer's Style

Marifer Lomeli

Guadalajara, Mexico

Ingredients:

1 piece of lettuce washed and patted dry

2 oranges peeled and sliced

1 carrot, sliced into small strips

1 – 2 celery stalks sliced

1 red pepper sliced into stripes

80 grams dried cranberries

80 grams flaked toasted almonds

dressing:

1 oz. or 30 ml. of orange juice

1 tablespoon of honey

1 tablespoon of rice vinegar

1 teaspoon mustard

1 or 2 twists of pepper

1 oz. or 30 ml. olive oil

Procedure:

In a large bowl toss the lettuce followed with the vegetables, fruits and nuts. Add the dressing ingredients to a small lidded container and shake well to blend. Add dressing when serving the dish and enjoy a fresh and healthy Orange Salad.
