Aubergine Andreja / Eggplant Andreja

Ingredients:

3 large size and firm, shiny eggplants

150 ml. olive oil

150 grams of walnuts

4 garlic cloves

1 bunch of coriander

Procedure:

Preheat the oven to 180 Celsius or 365 Fahrenheit.

Peel and slice the eggplants lengthwise. Brush them with some olive oil and place spaced apart on an oven tray. Bake them for 10 to 15 minutes until soft or lightly golden. Place sliced eggplants on top of each other in order to let absorb oil from both sides, stack them.

Place walnuts and garlics on a tray in oven for 8 to 10 minutes. Once cooled, place nuts and garlic in a food processor and add olive oil and coriander in order to get the consistency of a paste.

Spread a thin layer of the nut paste on an eggplant slice and roll up- Repeat and serve.

Very original recipe!!!
