Spring Mix Salad

Ingredients:

50 grams of toasted and sliced almonds

100 grams strawberries

100 grams mango

100 grams blueberries

¼ sliced red onion

100 grams blue cheese (crumbled)

Dressing:

1 oz. olive oil

1 teaspoon of Dijon mustard

2 oz. Raspberry red wine vinegar

2 tablespoons of orange juice (concentrate)

Procedure:

Prepare the dressing by mixing the olive oil, orange concentrate, mustard and the raspberry vinaigrette into a lidded container, shake it well.

Rinse the strawberries and cut the stem, then slice them.

Cut the onion in small slices. Peel the mango and cut it into pieces.

Toss the spring mix salad into a bowl, add the strawberries, blueberries, mangoes, onions, almonds and blues cheese. Add the dressing and enjoy a delicious fruity salad.
