Banana Pound Cake / Panqué de Plátano

Ingredients: 125 grams of softened butter 250 grams of sugar 3 eggs 1 teaspoon vanilla extract 3 pieces of ripe banana 250 grams of flour 60 grams cornstarch

2 teaspoons baking powder ½ teaspoon baking soda

Optional: walnut or pecan nuts approx. 200 grams.

Preparation: Preheat oven to 177 Celsius or 350 Fahrenheit. In the mixer, blend the softened butter along with the sugar until well combined and fluffy. Then add the eggs and the vanilla extract, mixing well. Follow with the flour, corn starch and sodium bicarbonate and mashed bananas, mix well.

Lastly add coarsely chopped nuts if desired and stir.

Pour the mixture into a butter greased cake pan. Bake for 50 minutes, remove from the oven and allow to cool.

Once cooled sprinkle powder sugar on top and serve.
